Homemade Cheong Fun


I have a great fun making these cheong fun, which is simple and easy, with a bit of patience you are able to enjoy it.  It is so delicious, and is not as oily as the Yum Cha place definitely.  The sauce is something never to be missed!

Ingredients 
Rice flour  200g
Corn flour  30g
Wheat flour  25g
Salt  1/2 teaspoon
Water  700g
Oil  1 tablespoon
Spring Onion ( slice finely)
Shrimps  50g ( soaked to soften it. Cut them in small pieces)



Sauce to go with it
Mix the following in a bowl, give it a good stir.
Drinking water  5-6 tbsp
Soya sauce  1 tbsp
Dark soya sauce  1 tbsp
Oyster sauce  1 tbsp
Sesame oil  1 tbsp
Sugar  2 tbsp

Keep in mind that you need to give it a good stir before you pour some onto the pan for steaming (everytime).


Grease the pan with a thin layer of oil (everytime) before adding the mixture for steaming.

pour in just a thin layer of mixture, that way you get a nice thin layer of cheong fun.

using a plastic scrapper, slowly fold up he cheong fun.

Methods
In a large bowl, mix all ingredients, give it a good sitr.
Heat up your steamer, use high heat for the whole entire session.
Brush a thin layer of oil on the prepared pan, pour a thin layer of mixture onto it.
Cover the lid, let it steam for 2 minutes.
Bring it up, using a scrapper, starting from one end slowly to fold up the cheong fun.
Repeat the rest until it is all done.
