Dan Lepard's Aussie Apple Scrolls (Dan Lepard)



This is what we always get to see at the local bakery here, very soft and fluffy tasty buns.




Recipe from Dan Lepard ( Good food)

Ingredients ( makes 6)
1 tsp easy -blend yeast
200ml warm water
1 medium egg
75ml milk
450g strong white flour, plus extra for rolling
25g castor sugar
1 tsp salt
50g unsalted butter
Oil, for kneading


Filling
75g mixed dried fruit
1 or 2 dessert apples ( peeled, cored, diced into small pieces)
Cinnamon


Methods
Dissolve yeast in the warm water, beat in the egg and milk, mix in the flour, sugar and salt.
Add the melted butter and dried fruit, mix until well combine.
Leave for 10 minutes.

Light knead and fold. Cover and leave for 10 minutes.
Knead once or twice more for the 10 minute interval.
Cover and leave until risen by half, about an hour.

Flour the work surface, roll the dough 1cm thick and cover with cinnamon and apples.
Roll up tightly, cut into 3cm wheels and placed almost touching on a bakng tray with parchment paper.
Cover and leave in warm place until almost doubled.

Bake at preheated oven of 220C for about 15 minutes.
