Simple Choc Chip pull-apart buns

More chocolates for my kids, they are never tired of it.  Basically I needed to buy bars and bars of chocolates each weekend.  So, they are sure happy with this recipe.






Ingredients ( 750g loaf / lots of buns sizes of your choice)

1.  Lukewarm water  260ml
2.  Butter or margarine 20g ( I used grapeseed oil)
3.  White sugar   4 tablespoons ( it's necessary, otherwise it does not taste like choc chip buns anymore)
4.  Skim milk powder  1 tablespoon
5.  Salt  1 teaspoon
6.  Bread improver  ( I used 2 tablespoon of yoghurt)
7.  bread flour  375g
8.  1 lightly beated egg.
8.  Dry yeast  1 and 1/4 teaspoon


Lots of melted choc chips
2 tablespoons of cocoa powder


Very soft and fluffy

With such large buns, you feel really satisfied.

Method ( I used a food processor):

1.  Make a sponge.  Mix yeast, sugar and lukewarm, whisk until yeast dissolved well.  Stand for 5 minutes in warm area, to wait for the foam appears on top of the surface.  ( after 20 minutes if foam is not appearing, meaning it is not in good use anymore). Once it's done, together with egg and yoghurt all added in the yeast mixture. Wrap with cling wrap and chill it in fridge for 10 minutes.

2.  Meanwhile, salt, skim milk powder, flour, cocoa powder goes in the food processor.  "pause" 2 to 3 times to get it all mixed.

3.  Now, pour in oil as you "Pulse" 2 to 3 times.

4. Pour in the yeast mixture gradually as as you "pause" the machine again,  once the dough comes together, it's done ( over mixed is not good).  If the dough is too wet, add one tablespoon of flour and quick "Pulse" once.

5. Scrape out the dough, add in chop chips now, roll into a ball shape,  let it sit in an oiled bowl for an hour or until the size is doubled.

7. Deflate air bubbles and roll it back to ball shape, let gluten relax for 10 minutes.

8. Divide into buns according to your preference of sizes.
note: Use oiled hands and scraper to handle rather sticky dough.

9. Let it have second rise for another hour or until size is doubled.

10. Quick water spray on buns.  Bake at pre-heated oven  20 - 25 minutes, 170C ( all oven varies).
Stick through a skewer onto the centre bun, if it comes out clean, it's done.

note: my buns stay soft and fluffy even days! just microwave for 10 to 15 seconds, that will do.
