Another one of Dan's excellent breads....
I barely needed any kneading for this! I just love Dan's methods..:)
love the generous seeds here |
Recipe: Dan Lepard ( The Guardian)
Ingredients (one large loaf)
175g carrot
150ml warm water
100ml orange juice, at room temperature
7g sachet fast-action yeast
25ml olive oil, plus more for kneading
450g strong white flour
50g wholemeal or spelt flour
2 tsp salt
50g black or white sesame seeds, plus extra to finish
main ingredients |
a dough that is so easy to manage, thanks to the orange juice :) |
roll it up tightly |
ready to be baked |
Method
1. Peel and grate carrots, place them in a bowl. Add in warm water and orange juice.
2. Stir in the yeast, leave 5 minutes till dissolved, then add the oil, flours , salt and seeds, mix well to a firm dough. Leave and cover dough for 10 minutes.
3. Gently knead for 10 seconds. Cover and leave for about an hour, or until risen by half.
4. Using a large loaf tin, line the base and sides with non-stick baking paper. Oil the working surface, pat the dough into an oblong shape. Roll it tightly like a scroll, squeeze the ends together as you pick it up and lower it, seam-side down, into the tin. Cover and leave for about an hour.
5. Pre-heat over to 200C. Using a pastry brush, lightly wet the top of the dough, sprinkle thickly with sesame seeds. Cut a deep slash down the middle and bake for about 50 minutes.
note: I placed a pan filled with boiling water at the bottom level of the oven during baking.
