Simple, tasty "Bing"
Ingredient
Bread flour 100g
Plain flour 100g
Instant dry yeast 2g
Lukewarm milk 150g
Oil 12g
Oil paste ( mix all together and set aside)
Flour 5g
Oil 15g
Salt 3g
Sesame seeds
Method
Whisk and dissolve yeast in the lukewarm water.
Combine all ingredients. Stir and mix them into a rough dough.
Cover and leave for 10 minutes. Gentle knead for 10 seconds, cover and leave for 10 minutes. Do twice more of this in every 10 minute interval. Dough should be smooth and glossy by now.
Cover and let it rise for an hour.
Punch down the air of the well-risen dough, roll it out in rectangle sheet, try to roll it thin.
Brush top with a layer of the oil paste.
Fold up the sheet, 5cm wide, seal seam up by the end ( forgot to snap photo on this part:))
Cut into 4 pieces, let it rest for 10 minutes.
Take one piece out, bring all angles inward and roll into a ball shape. Do to the other pieces, let it rest for 10 minutes.
With the sesame seeds on the plate, brush with a little water, stick the dough onto the sesame seeds.
Gently roll them all into a round Bing for the last time.
Lay them all on a baking tray, with a little spacing between each. Let it rest for 30 minutes.
Preheat oven to 230C, middle shelf, spray some water in the oven, bake for about 8 minutes.
( I had a metal pan filled with boiling water throughout the baking).
