Tasty Tuna Buns

Ingredients (A)
Bread flour 300g
Cake flour 100g
Castor sugar 30g
Salt 1/2 tsp
Instant dry yeast 1 tsp
Whole egg (beaten) 100g
Lukewarm water 140g
Unsalted butter 30g
Filling
Oil 1 tbsp
Onion ( cut into small pieces) 100g
Canned tuna fish 200g ( weight is after excess liquid sifted through, use a fork to press)
Ground black pepper 1/2 tsp
Salt 1/4 tsp
Tasty shredded cheese 70g
Decoration ( raw white sesame seeds, about 200g)
Note: this is a double batch of original recipe
Methods (with modifications)
In a large mixing bowl, add in the flours, salt , sugar and yeast. Pour in beaten egg and lukewarm water, give it a good stir. Add in the butter, knead until the dough turn smooth and glossy.
Cover and let it rise for about 80 minutes.
Filling: Heat up oil, add in onions, fry until fragrant, remove from heat and add in tuna fish, black pepper and salt. Let cool, add in cheese and well combine everything. Set aside.
Punch down air, roll dough into a ball, rest 10 minutes.
Divide dough into 10 portions, roll into balls, cover and let it rest for 10 minutes.
Flatten slightly, roll each into a round disk, place some fillings in the centre, seal up the buns, lay on baking pan with parchment paper.
Brush with egg wash, sprinkle with some sesame seeds, cover and let it take the last rise in a warm place for 30 minutes.
Bake at preheated oven of 190C for about 18 minutes.
( Note: I place a pan with boiling water in the lowest shelf of the oven during baking).
