Coffee Peanut Sesame Mantou


                                                 Another experiment of mine here..






       Ingredients
       Plain flour  400g
       Warm milk  220g
       Instant dry yeast  2g
       Brown sugar  2 tablespoons
       Skim milk powder  1 tablespoons
       Condensed milk  30g
       3 in 1 White Coffee  one packet
       Roasted salted peanuts  60g
       Sesame seeds  3 or 4 tablespoons ( I would put even more next time :))

        Note: no oil is used here.


Method
1.  Yeast, sugar and warm milk well whisked in a jug.  Cover and leave for 5 to 10 minutes in warm area.  When it become frothy, it is ready to be used.  Stir in condensed milk until well combined.

2.  Mix flour, milk powder, Coffee 3 in 1 until well combined.  Gradually pour in yeast mixture, using a chopstick constantly stirring, now add in peanuts and sesame , bring everything come together in a soft dough form.  Cover and leave for 10 minutes.  Gentle knead and fold for 10 seconds, cover and leave for 10 minutes.  Do this twice more for the 10 minute intervals.  Cover and let it rise for one hour or until it has doubled it's size.

3.  Dust flour on the working surface, deflate gas bubbles and roll into a rectangle shape.  Flatten dough well as you roll so to deflate as much gas as possible, roll it up tightly and seal up seams.  Cut them into your prefered sizes, place each on paper sheet, sit them on tray and let it rise again to about to an hour.

4.  Steam 12 minutes on rapidly boiling water. Turn off heat, remove buns out only 5 minutes later.
