Purple sweet potato sandwich buns (large size)


 Moist and pale purple sweet potato buns.


I made really big size :)

Ingredients (bread machine)/or your choice of kneading method
Bread flour  350g
Instant dry yeast  5g
Salt  4g
Castor sugar  56g
Milk powder  14g
Lukewarm water  210g
Mashed purple sweet potato   140g
Unsalted butter  28g

well-risen dough

ready to be baked


Method
Wet ingredients goes in the machine before the dry ingredients. Leave the unsalted butter aside first.
When everything comes into a rough dough form, add in the unsalted butter. Walk away and let the machine does the rest of the kneading job for you.
When completion, transfer the dough onto the floured working surface. Punch down air, roll into a ball and let gluten rest for 10 minutes.
Divide into your prefered sizes of buns, roll back into ball shape.
Cover and let it rise for an hour, or until the size doubled.
Brush with  a little milk, sprinkle with sesame seeds and bake at preheated oven of 180C for 15 minutes, or until it turns slightly browned and, a skewer inserted deep down and comes out clean.

note: a metal pan filled with boiling water is placed in the lowest shelf of the oven throughout baking.
