Chewy Oatmeal Chocolate Cookie


     As said, using quality chocolates will deliver best chocolate chip cookies.  I agree!


Here,  I used chopped big chunky dark chocolates....

Recipe from The Complete Bread and Baking Book
Ingredients
170g good semisweet chocolate
110g unsalted butter (room temperature)
1 egg, beaten
85g light brown sugar
60g self-raising flour
1/2 tsp baking powder
110g rolled oats
1/2 tsp vanilla extract























Methods
Preheat oven to 350C.
Use a sharp knife, chop the chocolate into large pieces. Set aside.
Beat the butter until creamy. Add in sugar, continue to beat until light and fluffy.
Gradually beat in the egg for a minute.
Sift the flour and baking powder and stir into the mixture with the oats and vanilla.
Add in the chocolate and mix well.

Scoop a heaped large spoon of mixture on the baking tray.
Flatten slightly and bake for 12-15 minutes.  Leave enough space between, it does spread a lot.
It's done when cookies looks golden and just firm. Let cool on the baking tray for a minute.
Transfer to a cooling rack to cool completely.
Store in an airtight container.
