Chocolate Banana Muffins ( healthy)
They are delicious, healthy,very moist and light muffins. It gives you lots of banana flavour and overall not too sweet, add more sugar if you like it sweeter.
I would use wholemeal flour the next time, it should work perfectly fine too.
Makes 12 muffins ( or 6 large)

Ingredients
3 very ripe or overripe bananas ( one cup)
66ml Applesauce
59ml Oil
3 large Eggs
100g soft light brown sugar
225g plain flour (sifted)
3 tbsp best quality cocoa powder (sifted)
1 tsp vanilla extract
1 tsp bicarbonate soda
Methods
Preheat oven to 200C.
In a large bowl, mash the bananas, whisk in oil, applesauce, then eggs one at a time, vanilla extract and sugar.
In another bowl, mix and stir together the flour, cocoa powder. Pour into the banana mixture.
Beat in quickly and gently (over mixing the batter is not good)
Spoon into the prepared paper cups.
Bake for 15 to 20 minutes, insert a skewer in the deep centre of the muffin, if it comes out clean, it is done.
