Pumpkin Crepes

These Crepes are good, not overly sweet and I like the idea of adding a bit of cornstarch,  gives a very nice texture in the end.




    Ingredients
    3 eggs
    1 cup milk
    1 teaspoon vanilla extract
    1/4 cup cornstarch
    3/4 cup cake flour
    3 tablespoons pumpkin puree



Mix them well



Medium heat..




   Method

   1.  Combine and mix all ingredients well.  Set aside for 20 minutes.

   2.  Heat up a crepe pan or medium size pan, medium heat.

   3.  Put a bit of butter in the pan, using 1/4 cup scoop, scoop batter into the pan, when you see bubbles popping up on the surface of the crepe, flip it over and brown the other side as well.

   4.  Add toppings and serve.
