I never thought I would be able to make roti canai, indeed a very good experience for me. We had a good Nyonya curry chicken and roti canai for the dinner, everyone smiled. Thanks to Poh's Kitchen :)
I made it to go with the Nyonya chicken curry |
Ingredients ( makes about 8 to 10 roti):
500g plain flour
1 cup water
1 teaspoon sugar
1 teaspoon salt
1/2 egg, lightly whisked
2 tablespoons margarine, at room temperature
extra margarine
extra vegetable oil
rub each ball with margarine, overnight resting.. |
Method
1. Pour in flour, sugar and salt in a large bowl. make a well in the centre and pour in water, condensed milk, margarine and egg. Stir until everything comes together as a rough dough. Knead until smooth and elastic. Roll into a cyclinder and divide into 10 pieces. Gently cover each ball with margarine and rest in a bowl alongside but not on top of another. Plastic wrap and allow to rest at room temperature, overnight.
2. Dough should be soft and stretchy after overnight resting. Oil the bench top, place one ball of dough onto the benchtop, press down with the palm of your hand while moving it in a circular motion. This way is to flatten and smooth out the surface of the dough as much as possible before you stretch it. Gently stretch the edges outwards as far as thinly as you can, and before holes start to appear.
3. Fold one third of the way in on either side of the circile, so you have layers of roti on top of each other, then fold this elongated shape into thirds again, so you end up with a squarish shaped out. Heat up pan on high heat with a dash of oil and panfry the roti until golden blisters appear on both sides. When cooked, slide the roti onto a chopping board, wrap your palms around the edges and smash your hands together so the roti bunches up and flakes. Rotate the roti and do this several times while it is still hot. Serve immediately with curry.
