Beef Pancake ( Bing)

Ingredient
Dough
Plain flour  200g
Instant dry yeast  2g
Warm milk  135g

Filling
Pork mince  160g
Chopped onions  100g

Sauces for marinating the pork mince
Ginger extract  30g
Dark soya sauce  1/2 teaspoon
Five spice powder  1/4 teaspoon
Soya sauce  1 teaspoon
Sesame oil 2 tablespoons
Salt 1 teaspoon
Oil  1 teaspoon

divided evenly into 5 portions, roll into balls, let it rest.

turn it over the other side
roll it gently for the last time
 let gluten rest for 15 minutes.

Method
Yeast and milk well mixed and pour into the flours. Stir and mix into rough dough.  Knead until dough become smooth and glossy.
Cover and let it rise for an hour, until the size is doubled.

Mix in dark and light soya sauce, five spice powder, add in the ginger extract.  Stir and mix well. Add in the sesame oil, continue to stir. Let it sit for 20 minutes. Add in the chopped onions, stir and mix again. Last, add in salt and oil, mix well.
Transfer the well-risen dough to the floured working surface,  punch down air, divide into 5 even portions, roll into balls, let it rest for 5 minutes.

Take one ball out, roll into a disk form, thinner on the edges while the centre is thicker.
Place filling on the it and wrap it up. Cut off the extra bit in the end ( see picture below).
Let the smooth side facing up. Cover and let it rest for 5 minutes.

Gently roll and flatten slightly the dough. Let it rest for 15 minutes.
With very little oil on the nonstick pan, using medium low heat, pan fry them. When both side turn slightly brown, add in 50g water, cover the lid let it cook through. When water is drying up, remove the cover. Continue to pan fry both sides until surface looks crispy, it is done.
