Dan Lepard's Peanut and rosemary cookies
Very yummy cookies, you just keep on eating non stop, the rosemary...peanuts, oh my!

Recipe from: Dan Lepard ( the Guardian)
Ingredients
100ml sunflower oil
200g castor sugar
1 tsp honey
2 tsp very finely chopped rosemary ( I used dried rosemary, increased to 3 tsp instead)
1/2 tsp ground cinnamon
1 medium egg
150g salted peanuts
200g plain flour
1/2 tsp bicarbonate of soda
Method
1. Mix oil, sugar, honey, rosemary and cinnamon in a bowl, beat in egg and nuts. Stir in flour and bicarb evenly.
2. Make 30g balls, press them slightly on tray, spaced 5-6cm as they spread quite a bit. Press any loose nuts on top.
3. Bake at pre-heated oven 180C/350F for 12-14 minutes, until deep golden.
4. Let it cool slightly on tray. Transfer to cooling rack.
