Ginger cookies
Our favourite cookies, crispy and very gingery.

Ingredients
2 and 1/2 cup self-raising flour (340g)
1 cup sugar (200g)
1 tablespoon ground ginger
1 teaspoon baking soda
1/2 cup (110g) unsalted butter
1/4 cup ( 85g ) golden syrup
1 egg, beaten
2 pieces of candied ginger, minced
Method
Preheat oven to 325F/ 170C.
Put all the dry ingredients into a mixing bowl, stir until all well combined.
Gently melt the butter with the golden syrup. Pour onto the dry ingredients. Add
the egg and minced ginger, mix well with a wooden spoon to make a dough.
Using your hands, roll into small balls, of walnut-sized pieces, you should get
30. I made big sizes instead also, as you can see,I did not leave good spacing resulting dough touching each other during baking :)
Place them well apart on the baking tray with parchment paper, slightly flatten each ball
with your fingers.
Bake at preheated oven for 15-20 minutes or, until crispy and golden.
Let cool on rack.
