Ingredients
Bread flour 400g
Plain flour 100g
Instant dry yeast 6g
Castor sugar 80g
Milk powder 8g
Beaten egg 50g
Lukewarm water 260g
Unsalted butter (room temperature) 50g
one beaten egg for egg wash
red bean paste ( I used homemade)

let rise again, ready to be baked, egg wash |
Method ( I used Bread machine or, your choice of kneading method)
Wet ingredients goes in beofre dry ingredients ( leave unsalted butter aside).
When everythings comes together as a rough dough, add in the unsalted butter. Let the machine do the rest of the kneading job for you.
When completion, transfer dough to the floured working surface. Punch down air, roll into a ball shape, let it rest for 10 minutes.
Divide dough into 60g each, roll into balls. Let it rest for 10 minutes.
Roll each dough into a round shape, wrap in one red bean paste, seal it up.
Flatten the dough slightly, roll into rectangle shape, using your knife to make a few slits (like picture above), roll it like a sausage, twist and make a knot.
Lay them all on the baking sheet with parchment paper, let it rise again for an hour or, until it has doubled it's size.
Brush with egg wash and bake at preheated oven of 180C for 15 minutes, or until it turns golden.
note: place a metal pan filled with boiling water on the lowest shelf of the oven throughout the baking.
